Ingredients
- 400g Pasta or spaghetti
- 25g dried porcini mushrooms
- 8 chestnut mushrooms. sliced
- 1 red onion. finely chopped
- 1 garlic cloves. crushed
- 1 courgette thinly chopped
- 150g Extra light philladelphia cream cheese
- a pinch dried crushed chillies
- 1 egg yolk. lightly beaten
- Fresh Chives. Snipped
- salt and pepper to taste
- Low fat oil spray for frying

A good simple meal for vegetarians which can be enjoyed by all!

1. Put the Pasta on to boil
2. Put the dried Porcini mushrooms in a bowl and cover with boiling water (make sure they are just covered, not too much water), leave to soak for a while.
3. Fry the onions, garlic, courgette and mushrooms using the low fat spray untill softened.
4. Once they have cooked add the soaked dried mushrooms and the water they've been soaking in, the egg yolk and the philadelphia cheese.
Stir it all together and simmer for a few minutes.
5. Sprinkle over the dried chillis, salt and pepper. Then add the pasta to the pan and mix thoroughly with the sauce.
6. Serve and garnish with the chives.

Chef's Tips
I've also seen that you can buy packs of "dried exotic mushrooms" which have shitake mushrooms and a few others which would also work with this recipe!
