Orange and sultana slice
Ingredients
- 2 tsp Baking powder
- 275 g Self-raising flour
- 2 tbsp Milk (any kind)
- 4 Eggs
- 225 g Caster sugar (golden or white)
- 225 g (+ a little for the tin) Unsalted butter, softened
- 275 g Sultanas
- 2 Oranges (zest only)
- 1 tbsp - for topping Demerara sugar

Preheat the oven to 180 degrees C.

Grease a rectangular tin approx. 30 x 20 cm with a little butter, and line with baking paper.

Put all the ingredients, except the demerara sugar, into a mixing bowl and beat well for about 2 minutes.

Spoon the mixture into the prepared tin and smooth the top.

Bake in the preheated oven for 25 minutes.

Sprinkle the top with demerara sugar and return to the oven for a further 10 minutes.

Check if a skewer comes out clean and the top springs back when touched in the centre.

If not quite done, give it another 5 minutes.

Leave to cool in the tin.

Turn out and cut into 12-16 slices.
Chef's Tips
Variation I have tried and enjoyed even more - use half sultanas or raisins, and half dried cranberries.
