Perfect for energy on the go, these wholesome Scottish oatcakes are crafted with heartiness and delightful textures. A great companion for snacks or layered with your favorite toppings.

Method

    Preheat your oven to 180ยฐC (350ยฐF).

    In a large bowl, mix together 250g of rolled oats, 1/2 teaspoon of baking soda, and 1 teaspoon of ground cinnamon.

    Add 100ml of melted unsalted butter and 3 tablespoons of honey into the dry mix. Stir well until fully combined.

    Knead the mixture until you achieve a thick and cohesive dough.

    Roll out the dough on a floured surface to about 1/4 inch thick and cut it into squares or desired shapes.

    Arrange the oatcakes on a baking tray lined with parchment paper, spaced evenly apart.

    Bake in the preheated oven for 25 minutes or until they are gently golden brown, turning once halfway through baking.
