Nigerian Sweet Potato and Spinach Stew

- 500 g Sweet potatoes
- 200 g Spinach
- 1 medium Onion
- 2 cloves Garlic
- 1 tbsp Ginger
- 400 g Tomatoes
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- 1/2 tsp Low-sodium pepper
- 250 ml Water

Peel and cube the sweet potatoes and set aside.

Chop onion, garlic, and ginger. Process tomatoes into a purée.
Cooking

In a large pot, sauté the chopped onions, garlic, and ginger over medium heat (around 180°C) until fragrant and translucent, about 3-5 minutes.

Add the sweet potato cubes to the pot and sauté for another 5 minutes.

Mix in the tomato purée along with ground cumin, coriander, and any low-sodium pepper for added heat. Stir well to combine.

Pour in enough water to just cover the sweet potatoes, bring to a simmer, and cover for about 20 minutes, until sweet potatoes are soft.

Once tender, add the fresh spinach and stir for another 3-5 minutes, allowing the greens to wilt.
