- ΒΌ teaspoon bicarbonate of soda
- pinch salt
- 3oz butter. softened
- 6oz caster sugar
- 2 med. eggs lightly beaten
- 4oz walnuts chopped
- 2 pears approx 11oz unpeeled weight

Heat oven to 180C/gas 4.
Grease and line the base of a 2lb loaf tin.
peel and core pears and roughly mash, discard any pear juice that might make mix too soft.
Mix flour,bicarbonate of soda and salt together.
Cream butter and sugar until light and fluffy, add eggs alternately with the flour a small amount at a time.
Mix in the walnuts and pears.
Place in the prepared loaf tin and bake for approx. one and a quarter hours or until cooked. [Cover with foil it top browning too fast].
Cool on a wire rack.
Serve buttered.
