Gently cook the onions with the peanut butter ans 1 tb water for 5 minutes in a covered saucepan without colouring. Add the tinned tomatoes, veg stock, potatoes, pimentos and carrots. Cover, bring to the boil and simmer gently until the veg are tender. Stir in cream ans season to taste with paprika and cayenne. Serve sprinkled with coriander.
