Method

    Boil potatoes until tender and then mash.
    Cook salmon fillets.
    Preheat oven to 200c.
    Flake fish.
    Add potatoes, lemon juice,mayonnaise and chopped herbs.
    Season well.
    Mix together.
    Grease baking trays.
    Roll mixture into balls and flatten before placing onto baking tray.
    Drizzle or brush with olive oil.
    Bake in oven for about 25mins or until going golden.
    Delish with veg or salad.
