- 2 tbsp. Vegetable oil
- 1 large Onion. roughly chopped
- 1 tbsp. Curry powder
- 1 tsp. Ground coriander
- 1 tsp. Ground turmeric
- 130g Button mushrooms. roughly chopped
- 1 Red pepper. deseeded and finely chopped
- 2 Courgettes. roughly chopped
- 0.5 bottle Heinz Tomato Ketchup
- 400 ml Vegetable stock
- Freshly ground black pepper

The Baron de Ley winery was founded by a prestigious group of Rioja professionals in 1985. They were quite unique in their approach as they modelled the winery on a Medoc chateaux, which was a pioneering move at that time for producers in the Denominacion de Origen Calificada Rioja. This wine is aged in new oak casks for 20 months prior to resting in the bottle for 2 years before release. It has definite claret qualities; the nose is layered with ripe cherry, toasty oak and a touch of cigar box. 1. Heat oil in a large frying pan and add onion with the spices and cook until onion is softened โ this takes about 10 minutes.
2. Add mushrooms, peppers and courgettes and cook for a further 2 minutes.
3. Stir in Heinz Tomato Ketchup and vegetable stock and simmer uncovered for 15 minutes.
4. Season with black pepper and serve.
