Ingredients
- 1 lge onion. finely chopped
- 2 cloves garlic. crushed
- 200g Tin of Chopped Tomatoes
- 1 small aubergine. cut into 1cm dice
- 140g red split lentils
- 300g lean diced lamb
- 1 tsp Turmeric powder
- 2 tsp mild chilli powder
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp light muscovado sugar
- 1 tbsp lemon juice
- small bunch fresh coriander or mint or some of both. roughly chopped
- 250ml very low-fat yoghurt (o% Greek is nice and thick and creamy!)

1. Put the onion and garlic into a large saucepan with 100ml water. Bring to the boil and cook for 5 minutes until softened and nearly all the water has been absorbed.
2. Add the tomatoes, aubergine, lentils, lamb, turmeric, chilli powder, cumin, coriander, sugar, lemon juice and 450ml water. Bring to the boil, cover and simmer for 1 hour until tender.
3. Season well and stir in most of the coriander or mint and half of the yoghurt. Immediately remove from the heat. Serve with basmati rice and the remaining yoghurt spooned on top. Sprinkle with the remaining coriander or mint.
Chef's Tips
I love Rogan Josh but the fat/calorie content doesn't bear thinking about so this is a lamb/dhansak sort of curry without the guilt. Very low fat and very tasty! Just serve with basmati rice, forget the poppadums and naan though if you want to keep it low fat. Add some diced cucumber and mint to the serving yoghurt for extra flavour and a dollop of mango chutney!
