- 1 lb Cottage Cheese - Plain
- 2 Large Eggs
- 2 oz Butter - melted
- 4 oz Sugar - Caster preferably
- 2 oz Currants - plump ones
- 2 teasp Baking Powder

First make pastry to line twelve pattie tins or a larger 9" tin or dish.
Into food processor place all the ingredients, EXCEPT the currants - the cottage cheese is the equivalent of the 'curd' in the title. Whizz well until the mixture is smooth. If no processor beat by hand - works as well.
Hand stir in the currants. If place in processor get chopped up too finely. Pour all into the pastry case(s) and bake at 170 degrees C (or equivalent)for 30 mins or until set and light golden brown. Set if skewer comes out clean.
Once cool will sink a bit. This does not matter. Serve with cream and enjoy.
NB. This is the original recipe handed down around a farming community, but I like to add a couple of drops of vanilla extract or grated lemon peel. Just lifts somehow.
