Description
I made this last night with leftovers from Christmas.
Method

Get two small dishes and fill almost to the top with ice cream.
Cut a small hollow in the middle of the ice cream and pour the baileys into the hollow.
Cut a small amount of ice cream to cover the hollow.
Wrap with cling film.
Turn upside down and place back into the freezer.
Take 1/2 the bar of dark chocolate and place in a bowl. Add the pinch of chilli powder
Place bowl in a saucepan of hot, but not simmering, water.
Do the same with white chocolate.
When the dark chocolate has melted, stir and taste.
Add the brandy cream to the white chocolate. Mix into the white chocolate.
Once all the brandy cream has been mixed in with the white chocolate (add more if you want) get the ice cream dishes out of the freezer.
Remove the ice cream out of the tubs and onto a plate. Pour a small amount of warm water over the dish to allow the ice cream to slip out the dish onto the plate.
Take the white chocolate sauce and pour over the ice cream bombs.
Take the dark chocolate sauce and pour over the top of the white chocolate covered bombs.
Serve immediately.
Chef's Tips
Put the plates you'll be serving the bomb on in the freezer before you start the dish.
Use normal baileys or any other liqueur you fancy instead.
