- 110g Margarine softened
- 170 g self raising flour
- 170g caster sugar
- 1 zest and juice of lemon
- 2 large eggs
- salt
- 3-4 tbsp milk
- 3 tbsp icing sugar
- 7 inch Cake tin greased and lined

Description
This is a closely guarded family recipe that I have finally persuaded my Grandma to share. It has been my favourite since I was a child and remains the best I've ever tasted!

Pre-heat the oven to gas mark 4, 180 degrees centigrade or 350 Fahrenheit
Cream the margarine and sugar together, until light and fluffy
Beat the eggs and gradually add them to the margarine and sugar mixture
Add the lemon zest
Sift the flour and fold into the mixture
Add the milk and mix
Pour into the tin and bake for 25-30 minutes
Cool in the tin. When it is cold, use a knitting needle and make holes in the top of the cake.
Make the icing by mixing 3 tablespoons of the lemon juice with the icing sugar. Pour it over the top
