Origin Pinot Grigio Organic

The nation's favourite tipple in an organic bundle. A great value wine,Β from Italy's ever popular Pinot Grigio grape. This wine is perfectly balanced with juicy pear and peach notes and soft floral aromas

Description

Duck is a bit of a treat and is a superb meat for Chinese cuisine. This is a gorgeous dish! This is also for my twin sister Vivien!

Method

  1. 1

    1. Thinly slice the duck breasts then place in a dish. Mix together the soy sauce, sherry, cornflour and suger and pour over the duck. Mix well and marinate for about 30-40 minutes.
    2. Heat the oil and fry the shallots, garlic, ginger and chilli in a wok and stir fry for 30 seconds before adding the duck slices. Stir fry for 3-5 minutes then remove the duck to a bowl and set aside.
    3. Add the spicy brown bean paste and stir for 30 seconds.
    4. Top and tail the beans and chop into 1" pieces then add to the wok. Stir to coat the beans with the sauce then add a little water. Cover and cook for about 5 minutes.
    5. Return the duck to the wok and continue cooking until most of the moisture has been absorbed and the duck and beans are cooked. Serve hot with rice. Adjust the seasoning.

Chef's Tips

This doesn't need anything more than some simply cooked rice.
