Leave the skins on the spuds. Cut into chip size pieces and boil until almost soft.
Meanwhile pour the egg into a shallow dish and put the flour onto a plate. Coat the fish in egg - drag through on both sides and then do the same through the flour. Pop straight into a hottish frying pan with a little oil - add more as you go along if needed. Cook the fish until golden brown on both sides and cooked through.
Whilst the fish is cooking drain the chips well and add to another hot frying pan - oil as above - and cook through until tender and golden brown.
Drain away any excess oil or mop up with kitchen roll. This has to be as healthy as possible.
Dish up together and enjoy!
Chef's Tips
Add a dash of lemon juice to the fish when cooking. It improves the flavour, masks any fishy smells and the pan is easier to clean afterwards.
This recipe sounds great but try boiling the chipped potatoes until softish then arange on a reusable cooksheet sprinkle with spices and bake in a hot oven until golden (no fat needed) just enjoy
It's guilt free!
