Ingredients
- 2 fillets or other white fish skinned and cut into 1- cm wide strips
- salt and pepper
- 2 tbsps plain flour
- 1 egg
- 115g white or Wholemeal Breadcrumbs
- 1 tbsp Finely Chopped Fresh Parsley
- 2 large Potatoes scrubbed
- 6 tbsp olive oil

1 Preheat the oven to 200C gas mark 6. Season the flour and put on a platr. Roll the strips of fish in the flour until covered.

Beat the egg in a bowl and pour it into a shallow dish. Dip thefish into the beaten egg. Mix the parsley and breadcrumbs.Season.

Out the mixture into a plastic bag and toss in the fish to coat thoroughly. Chill on a baking tray in the fridge for 30 minutes.

Cut each potato into 8 wedges. Place on a baking tray and brush over half the oil. Turn the potatoes and brush the other side.Season.

Bake the chips for 35-40 mintues intil golden turning occasionally. After 20 mintues remove the fish form the fridge. Drizzle with the rest of the oil.

Bake at the top of the oven for 15-20 minutes turning halway through. Serve with a lemon and your favourite sauce
