Ingredients
- 6 Chicken Thighs
- or 2 Chicken Breast
- 4 tbs Light Soy Sauce
- 1 tbs Dark Soy Sauce
- 2 Green Birds Eye Chilli's
- 2 tbs Brown Sugar
- 1 tbs Sesame Oil
- 3 tbs Peanut Butter
- Small Cucumber
- 8 Spring Onioins

Heat the chilli and the oil gently in a pan for about 2 mins, dont burn as you'll wont be able to see or breathe, then set aside.
Take the thighs/breasts without the skin and simmer for 30 mins, or until cooked thoroughly, drain , set aside and allow to cool.
Chop the cucumber and spring onions into sticks and arrange around the the plate leaving room for the chicken in the middle.
Once cooled place, the on a chopping board an give it a damn good whacking with a rolling pin until the chicken broken up.( or place on a plate and tear the chicken apart with two forks)
Go back to the pan with the oil and chilli's gently heat for 30 seconds and add the soy sauce (both types)and sugar. Heat for 1 min until the sugar has disolved then add the Peanut Butter. Heat gently for a further 2-3 mins until the sauce has thickened.
Place the chicken in the centre of the plate with the cucumber and spring onion and pur the sauce on top of the chicken.
Then serve, (personally I could eat all this myself in one go, and have!)

Oh yum! I haven't made this in ages. I used to add sesame seeds to mine, just sprinkled on the top. Great tasty salad.
