Ingredients
- 4 Boneless. skinless. chicken breasts. cut into mouth size pieces
- 2 Big onions halved and sliced
- 1 can Coca cola
- 3 inch Ginger
- 4 cloves Garlic
- 2 tsp. Turmeric
- 3 tsp. Ground cinnamon
- 0.5 tsp. Ground cloves. Be careful not to overdo it because it is rather bitter
- 4 Star anise. You can put in whole ones (approx. 4) but the ground is easier (approx. 1-2 teaspoons).Ant likes this so I usually put in 2. It tastes of

Nederburg Cabernet Sauvignon Rose
This beautiful rose wine is made entirely from Cabernet Sauvignon grapes, fruit driven, refreshing with abundance of berry flavours and a pleasant long finish.
Method

1. Firstly place the prepared chicken in a large bowl.
2. Add all the spices, stirring well, and finish off with the soy sauce to bind everything together and make the mixture wet.
3. While that is marinating, heat some oil and fry the onions until just they're going brown at the edges. I use a big non-stick wok but I'm sure you have a favourite curry pot !
4. Then add the chicken and carefully start to fry, turning frequently to ensure it starts to cook on all sides. Rinse out the bowl with a little water to get the residual spices and add this to the pan. Because the chicken is in fairly small pieces and off the bone it does not take long and you don't want it completely cooked because you now add the can of coke. Turn up the heat to high and cook rapidly, stirring every now and then. You want to reduce the sauce to a thicker consistency. Remember what mine looked like. Check the taste and if you want it hotter add some more curry powder or, as we sometimes do, a little chopped green chilli!
5. Just before serving add in the chopped coriander, sit down, eat and enjoy.
6. Serve with rice, lentils and any other favourite veg. (e.g. okra, stir fried cabbage etc.) and some nice cold lager!
