Ingredients
- 2 2 eggs
- 150g soft butter and some extra for greasing a loaf tin
- 175g Self raising flour (sieved)
- 6tbsp Milk (pref. semi-skimmed)
- pinch salt
- 1 Β½ Grated Lemon Zest
- 1 (lemon) Fresh Lemon Juice
- 200ml Whipping Cream
- 175g caster sugar
- as needed icing sugar
- 1tsp baking powder

Heat oven to 180d, useing 2x 7inch cake baking tins, grease and lin the bottom of each, beat the eggs and the caster sugar together for a few mins, add the butter bit by bit whilest still whisking for about 3mins, making as fluffy as possible, add the flour and baking powder and whisk untill all ingredents look nice and smooth, add the pinch of salt, zest of 1 lemon and 6tbsp of milk and whisk up untill all the milk has dissapered, using the same amount in each tin fill the cake tins, and place in the oven for around 20/25mins, on the middle shelf, once done take out let cool on a wire rack, using the juice from the lemon and an extra half, heat up in the microwave for around 30secs then add icing sugar as much as u think, prick the cake and using a spoon drizzel the lemon juice over the cake, leave to rest untill cold.
whisk up 200ml of whipping cream adding 1/2 lemon zest untill nice and thick, spread over top of one cake, and place other cake on top, sive icing sugar over the top, done.....
A little bit of a lemon drizzle cake and a victoria sponge , light soft and fluffy x
