Ingredients
- 1kg Pork belly
- 1tbsp Salt
- 2 tbsp Peanut oil
- 4 slices Fresh ginger
- 1ΒΌ cups Chicken Stock
- 400ml Rice wine
- 6tbsp Light soy
- 6tbsp Dark soy
- 5tbsp Sugar
- Β½ tsp 5 spice
- 2tbsp Yellow bean paste
- 2tbsp Hoisin sauce
- 4 Spring onions

Rub the pork with the salt and leave for 1 hour.
Rinse and dry the pork. Brown the skin side in the peanut oil - until it is as crispy as you can get it.
Add the other ingredients to the pork and bring to a boil. Reduce to a simmer and leave to cook for 2 hours (or until the pork is tender.
Chef's Tips
when I cook this I don't bother to brown the skin it doesnt go very crispy and when it does it loses its crispness during the simmering process.
When slow cooking leave the meat until it is tender - this might even take a couple of hours longer than the recipe says but have faith it will happen!
