Method

  1. 1

Heat the oven to 180/160 Fan..Gas 4. Grease and line 8inch(20cm) loose bottom tin with greaseproof paper.

Place all the ingredients in a bowl and mix thoroughly for 2 to 3 minutes and then turn into the tin and smooth the top.
Bake in the oven for about 50mins or until well risen and golden brown.
The cake will have shrunk slightly from the sides of the tin and the top will spring back when pressed with the finger.

While the cake is cooking, cut the marshmallows in half horizontally witha pair of sharpe sissors. As soon as the cake is cooked, remove it from the oven and place the marshmallows over the top, cut side down, then leave in the tin until the cake is quite cold.

Meanwhile blend the icing sugar with the orange juice together. lift the cake from the tin, remove the paper, and place on a serving plate. Then pour the icing over the top. It will run away into any cracks in the marshmallow topping and slightly down the sides.
