- 25g (1oz) butter
- 8 ripe figs
- Runny honey
- 4 tbsp freshly squeezed orange juice or water
- 8 slices of fruity bread

Heat a frying pan on a medium-high heat and add the butter.
Cut the figs in half and sit them, cut side down, in the pan. Fry for a few minutes until they are just starting to become golden. increase the heat to high, drizzle over about 2-3tbsp of honey and the orange juice or water.
Cook briefly until you have a juicy syrup. turn the figs over and cook for about 30 seconds.
While the figs are cooking, lightly toast the bread and place on 4 plates.
Cut the ricotta into thick wedges and put on the plates. Place the hot figs on top of the toast.
Spoon the hot honey and fig syrup over the ricotta and figs, adding extra honey if you like. Serve straight away.
