Description
A chilled soup alternative to my Gazpacho. This soup is a little more filling.

1. Melt the butter in a large saucepan, add the courgette and potato, cover and fry gently for 10 minutes until softened, shake frequently.
2. Add stock with the basil and seasoning. Bring to the boil and simmer for 20 minutes until the vegetables are tender.
3. Remove rind from brie and chop into small dice. Place in blender/food processor then add to soup. blend until smooth and leave to cool.
4. Chill overnight in the fridge.
5. Whisk soup vigorously to get an even consistency, taste and adjust seasoning.
6. Float courgette slices on top and serve.
