Description

For the more light-hearted among you... Made with creamy white chocolate.

Method

  1. 1

    1. Have ready a 23 cm square brownie tin about 4 cm deep, or equivalent. Lightly butter the tin (you can also line it with baking paper if you wish).
    2. Preheat the oven to 190C/170C fan/gas 5. Gently heat the 150g butter with the golden syrup, honey and vanilla in a small saucepan, until melted. Leave to cool for about 15 minutes, then beat in the eggs one at a time, and sift over and fold in the flour and baking powder, whisking until smooth.
    3. Pour into the prepared tin, scatter over the white chocolate and bake for 25-30 minutes until a skewer inserted in the centre comes out clean. Run a knife around the edge and leave to cool, then cut into squares. The blondies will keep for a couple of days in an airtight container.
