- 80g Unrefined caster sugar
- 20ml Horlicks
- 3 Large eggs
- 150ml milk
- 150ml double cream
- 3 handfuls Malteasers
- 100ml Chocolate sauce (optional)

1. Make up the Horlicks liquid as per pack instructions. I found this worked best when using milk in the mixture, giving a creamy luscious texture.
2. Whisk the egg yolks, Horlicks mixture and sugar together until a creamy blend and well-mixed.
3. Put both the milk and double cream in a pan and heat through on a medium heat until simmering, stirring constantly. Once simmering and almost boiled, pour the mixture over the egg/Horlicks/sugar mixture, stirring constantly.
4. Cool the mixture gently by pouring contents into a bowl and leaving in a cool place.
5. Crush the Malteasers into broken up pieces (not dust!). Pour this into the custard mixture and stir.
6. Either pour the mixture into your ice-cream maker (if you have one) or, if not, place your mixture into a plastic Tupperware box, stir and place in the freezer. Make sure you church the ice-cream regularly to avoid crystals forming until the ice-cream is fully set.
7. To serve, scoop the ice-cream out of the tub and serve with a sprinkling of crushed Malteasers and a drizzle of chocolate sauce. Enjoy!
