- 1 bag of baby leaf spinach leaves. washed
- 1 tin lychees
- 1 tin artichoke hearts
- 1 tin palm hearts
- 1 punnet sliced mushrooms
- 1/3 cup oil
- 1/3 cup vinegar
- 1/3 sugar

This is a refreshing salad with lychees and artichoke hearts

Line dish with baby leaf spinach. (Can use other leaves - I often add butter lettuce.) Throw all other ingredients over salad leaves.
Dressing: equal parts of oil, sugar and vinegar - whisk well in blender. Pour over salad when ready to serve.
