Add 50g white caster sugar to 600ml hot green tea, stir to dissolve, then add 100ml sieved lime juice and 4 tbsp stem ginger syrup. Leave to cool and then chill. Serve in tall glasses with lots of ice, fresh mint leaves and lime slices. For a delicious rum punch add a 25ml shot of dark rum to each glass, or 100ml to a whole jug.
