This simple, quick and richly satisfying sauce will serve you well when time is at a premium.

Method

    1. If not using the passata, whiz the tinned tomatoes briefly in a food processor until smooth. Heat the tomato passata (or whizzed tomatoes) to a simmer in a small pan with the butter and lemon juice. Season to taste. Drop in the mascarpone in small pieces and turn over a couple of times until just melting.

    2. The sauce is good combined with many kinds of pasta and is the basis for the macaroni cheesy prawns pictured.

Chef's Tips

FOR MACARONI CHEESY PRAWNS make the really fast tomato sauce, then just after seasoning, but without adding the mascarpone, add 200g cooked peeled prawns and heat through briefly. Toss with hot cooked drained macaroni (about 300g dried weight). Now add the mascarpone and toss through. Serve with grated parmesan scattered over and a grinding of black pepper.
