What better way to celebrate the season of promise than with some smart spins on old baking favourites, as well as some new friands?

    1. Preheat the oven to 190C/170C fan/gas 5. Lightly butter 2 large baking sheets. Put the butter and sugar in a food processor and work for about 2 minutes until the mix is light and fluffy. Add the syrup, vanilla and milk and mix well. Finely chop the chilled Mars bar and add the flour and Mars bar to the mix and pulse until it forms a firm dough. Using your hands, shape the dough into 30 walnut-sized balls and place on the baking sheets, allowing room for them to spread. Bake for 12-15 minutes until golden brown, cool on the tray for 5 minutes then remove and cool on a wire rack.
    2. For the filling, chop up the Mars bar and chocolate and put in a small pan with the milk. Heat gently, stirring until the mixture is smooth and glossy. Remove from the heat and cool until it is spreadable. Sandwich the biscuits together with the filling.
