Ingredients
- 2tbsp olive oil
- 1tsp yellow mustard seeds
- Β½tsp cumin seeds
- 10 curry leaves
- 2 garlic cloves, peeled and finely chopped
- 2cm fresh ginger, peeled and finely grated
- 450g cherry tomatoes, halved
- Pinch sugar
- 1tbsp tomato puree
- Pinch sea salt

Description
Try using this sauce tossed with spaghetti, fresh chillies and coriander for an Asian slant on a spaghetti arrabiata.

1. Heat the olive oil in a wok or frying pan until hot. Add the mustard seeds, cumin seeds and curry leaves and cook until beginning to pop.
2. Remove from the heat. Add the garlic and ginger, then cook over a low heat for 30 seconds.
3. Add the tomatoes, sugar, tomato purΓ©e, salt and 2 tbsp water and simmer over a low heat for 10-15 minutes until the tomatoes are softened and the sauce has thickened.
