Peel, stone and slice 4 ripe peaches and whiz in a blender until smooth or press through a sieve. Stir in 2-4 tsp rosewater or to taste. Chill the peach-rose purée until very cold. Have ready a chilled bottle of good-quality sparkling wine. Divide the peach purée among 4 flutes, top
up with sparkling wine and decorate with peach slices and
rose petals if desired.
