Amber Black's Soft Scoop Avocado Ice-cream

Wizard dishes to conjure up using avocado, the year-round green goddess of nutrition, magic on its own or in our velvety variations

   1. Have ready a suitable container for freezing (about 1.5 litre capacity).
   2. Juice the limes (they should yield about 100ml fresh juice).
   3. Peel, stone and roughly chop the avocados and whiz them in a processor until smooth. With the motor running, add the sugar, salt and lime juice, combining until smooth.
   Continue gradually adding the cream, processing to a light, smooth consistency.
   4. Transfer to the container and freeze until set, about 4-5 hours or overnight.
   5. When ready to serve, allow to soften slightly, then chop into chunks and place in the processor.
   Whiz in batches until smooth and serve in soft scoops with chocolate squares on the side. Be sure to serve immediately.
