Indulge with these home-made olives marinated in spices and extra virgin olive oil.

    Wash the olives and, using kitchen paper, pat dry thoroughly. Layer them up in a 1 litre jar with the chillies, orange rind, thyme, rosemary and peppercorns. Pour in the oil, ensuring the top layer is covered. Seal and leave to marinate in a cool place for 1 week.
