Description

Hamantaschen are traditional pastries eaten around the Jewish festival of Purim. They can be filled with poppy seeds or spiced apple and raisins.

Method

    For the fruit filling

    1. Peel and chop the apple and cut into pieces.

    2. Simmer all the ingredients together until the apple is soft.

    For the Poppy seed filling

    1. Grind the poppy seeds, then heat gently with all the other ingredients until a thick paste is formed.

    Making the Pastry

    1. Rub the butter into the flour and salt until the mixture looks like breadcrumbs.

    2. Sprinkle with the liquids and mix to a dough.

    3. Knead lightly until smooth (a bit like plasticine). Chill until the filling is cold.

    4. Roll out 1/8" thick on a lightly floured surface.

    5. Cut out 20 x 3" circles (try using a tuna tin for this)

    6. Put a heaped teaspoon of filling in the centre, then bring the edges together to form a triangle. Pinch the edges to ensure a tight seal but leaving a gap in the centre to allow steam to escape.

    7. Bake in a pre-heated oven 190c until firm to gentle touch but uncoloured.

    8. Leave to cool for 10 mins then sprinkle with the mixed sugars.
