Ingredients
- 3 Aubergines
- 1 tbsp Olive Oil
- 1/3 Cup Tahini Paste
- 1 tbsp Minced Garlic
- 4 tbsp Lemon Juice
- Β½ tsp Coarse Salt
- ΒΌ to Β½ tsp Pepper (dependant on taste)
- 1 - 3 Green Chilli Peppers (dependant on taste)

Description
Moutabel is a spicy dip from Lebanon. It gets its heat from green chilli peppers, which can be omitted if desired. Add as many chillis to the recipe as your tastebuds can take!

1. Preheat oven to 400 degrees. Place aubergines on lightly greased baking sheet. Roast for 30 minutes, or until the aubergine is tender. Once roasted, remove from oven and allow to cool.
2. Once the aubergines have cooled, peel the skins. They should come off fairly easy. If you are having a tough time, just scoop the eggplant from the skin with a spoon. Set aside.
3. In a food processor, combine and blend tahini, garlic, and chilli peppers. Add in aubergine and blend well. Add in olive oil.
4. Remove from food processor and place in serving bowl.
5. Stir in lemon juice and sprinkle with salt and pepper.
6. Serve immediately or store in the refrigerator for up to three days.
This spice dip tastes as good as it looks. I shall certainly make it again (Managed to get the 'Tahini paste' from Asda)
Susie, I was going to make the today but cant locate Tahine Paste. Tesco no longer sell it. Any ideas?
