Ingredients
- 1 x vanilla ice-cream recipe (without the vanilla)
- 175g plain chocolate
- 200g plain chocolate, broken into pieces
- 50g unsalted butter
- 175ml espresso coffee
- 1-2 scoops vanilla ice-cream or 2-3 tbsp whipped cream
- 2-3 Italian cantuccini/ biscotti biscuits or trifle sponge fingers, broken into pieces
- 1 small chocolate flake, crumbled
- 1tbsp marsala (optional)

Description
Making your own ice-cream is easy - even if you don't have an ice-cream machine. Just add chocolate and coffee to the basic recipe to create this delicious treat.

1. To make the ice-cream, melt the chocolate very gently in the microwave or in a bowl placed over a pan of simmering water, until it is nice and smooth. leave it to cool slightly.
2. Follow the vanilla ice-cream recipe on the left, stirring the melted chocolate into the custard when you add the cream and then leave to cool. Pour into an ice-cream machine and churn for about 20-30 minutes, until the ice-cream has become thick and scoopable.
3. To make the chocolate sauce, gently melt the chocolate and butter in the microwave or in a bowl over a pan of simmering water, until it is nice and smooth. Stir in the coffee and cool to room temperature, but don't chill it in the fridge or it will set.
4. When you are ready to make your sundae, layer some chocolate ice-cream, vanilla ice-cream or whipped cream, and cantuccini/biscotti biscuits or trifle sponges in a sundae glass. Pour over the chocolate espresso sauce and the marsala, if using, and finish off with the flake crumbled over the top.
