Nothing makes a scone more special than lashings of home-made strawberry jam

Wash the strawberries, remove the stalks and cut the larger ones in half. Place half of them in a large saucepan and crush with a potato masher. Then stir in the sugar and the rest of the strawberries.
Place over a low heat and stir occasionally until the sugar has dissolved. Then increase the heat and bring to a rolling boil for 8 minutes. This will give you a delicious, fairly soft set jam. If you prefer a much thicker jam, boil for a few minutes longer.
Take off the heat and leave to settle for 5 minutes before spooning off any white bubbly scum. After 10 minutes transfer to sterilised jars.
Seal and cool before storing in the fridge. Once open, use within 2-3 weeks.
