- 750g King Edward potatoes, cut into thick chips
- 3tbsp sunflower oil, plus extra for shallo frying
- 25g plain flour
- 50g dried breadcrumbs
- 3tsp Cajun spices
- 2tbsp chopped parsley
- 1 lime, zest
- 600g thick cod fillets, cut into chunky pieces
- 1 egg
- 100ml mayonnaise
- Β½ lime, juice
- Mixed salad

Preheat the oven to 220C/gas 7.
Blanch the potatoes in boiling water for 2 minutes and drain well. Heat the oil in a heavy-based roasting tin and toss in the chips. Coat well and bake for 20 minutes, turning occasionally.
Place the flour on a plate and season well.
Place the breadcrumbs on another and stir in the spices, parsley, lime zest and seasoning. Beat the egg in a bowl. Dip the fish in the flour, shake off any excess and then dip in the egg.
Roll in the breadcrumbs and set to one side until all of the fish is coated. Heat a centimetre or so of oil in a large frying pan, and fry the cod in batches, turning until golden. keep warm and repeat with the remaining fish.
Serve on a big platter with the chips, salad, mayonnaise and lemon wedges.
