Cronut, Squid ink & Poutine Burger Recipes
When you think of a burger, you traditionally think of the American style beef burger patty in a sesame seeded bun with a few thinly sliced tomatoes, lettuce, possibly a pickle or two and a generous helping of bright red ketchup. This image is depicted on so many billboards and commercials that its hard to envision a burger looking any other way. Burgers of course come in all shapes and sizes and fillings: chicken, fish, lamb, veggie or extra cheese recipes, but all tend to follow the same typical format of bun, salad thrown in for good measure and generous condiment portion.
These next few burger recipes take that traditional image of the burger and turn it on its head (or bun), we do advise that you take note of the calories in many of these options as they can be very high so should be treated with some caution.
1. The Deep Fried Cheese Burger
Yes you did read that correctly, this is a cooked cheese burger assembled into a bun, with relish, lettuce, tomato and cheese, held together with cocktail sticks and then plunged into batter (some use beer batter) and dropped into a deep fat fryer. Calories in these deep fried dishes can range around 5000, so please eat carefully
Ingredients
- 1 lb ground beef
- 1 grated onion
- Β½ tsp garlic powder
- 2 tsp Worcestershire sauce
- 1 dill pickle or cucumbers finely chopped
- 1 shake black pepper
- 1 shake sea salt
- 2 white burger buns
- 1 tsp ketchup
- 4 slices cheese of your choice
- 2 skewers
- 1 cup plain flour for dusting
- 2 cups batter mix (or make your own by beating together 100g plain flour, 1 egg, 300ml milk or Β½ milk 1Β½ water)
2. The Cronut burger
A Cronut is a cross between a croissant and a donut, but they donβt stop there. Inside this sugary hybrid goes a lorry load of beef and cheese. βSay hello to the Cronut burgerβ. The cronut with its flaky croissant and custard interior and fried, sugar-dipped exterior is the invention of brilliant pastry chef Dominique Ansel. The calories in one of these ranges at around 7000, so we would advise probably one a year.
Ingredients
- 1 Active Dried Yeast (.25 ounce sachet)
- Β½ cup Warm Water
- Β½ cup Skimmed Milk
- 2 tbls butter or margarine melted
- 1 tsp Vanilla Extract
- 1 egg
- 1 lb flour (plain)
- 12 tbls Real Butter (Softened)
- 1 tsp nutmeg powder
- 1 lb ground beef
- 1 tsb salt and pepper
- Β½ lemon
- 4 slices Cheddar Cheese
3. Premium Kuro Burger
This eating experience is not for the squeamish, the buns, ketchup and cheese are jet black and all coloured with squid ink and charcoal. Just based on looks, the Kuro burger is most inventive and interesting but we are not sure making the creation from scratch would be for everyone as you would need fresh squid for the ink. This is the best burger on calories as it is only 50 in total.
Ingredients
- 2 tbls bamboo charcoal
- 2 Β½ cups Bread Flour
- 3 tbls caster sugar
- 2 tsp Active Dry Yeast
- 1 tsp salt
- Β½ cup milk
- 1 egg
- 3 tbls Butter melted
- 120g Tangzhong - Add 5 part water - 1 part bread flour -mixed and heated until gluteonous
- 12 oz of shredded cheese
- 1 tbls powdered milk
- 1 eighth tsp Cream of tartar
- 1 Β½ cup whole milk
- 2 tsp Cream
- 1 tsp gelatine
- 2 tsp squid ink
- 1 lb Ground Black Pepper to taste

4. Waffle burger
Waffle makers now reside in many peopleβs homes so that they can get that instant gratification of a morning waffle, just like they eat in the movies. But a waffle and a burger? Well along with cronuts, waffle burgers are now becoming big business with many restaurants and pop-up establishments offering them. The waffle burger with double cheese and bacon comes in at 900+ calories, so not as bad as some of the others.
Ingredients
- 3 tbs sugar
- 1 eggs. beaten
- 1 quarter cup Butter
- 1 Β½ cup buttermilk
- 3 tbls instant yeast
- 1 Β½ salt
- 4 cups Flour
- 1 lb Beef Mince
- 1 shake pepper
- 1 tsp Worcestershire sauce
- 1 Grated onion
5. Poutine BurgerLetβs take a break from the sweet burgers for a second and go to a Canadian favourite - Poutine. A recent food trend, poutine consists of french fries, topped with a light brown gravy-like sauce and cheese curds. It has become very popular amongst the foodie set and now it has a burger of its own. On its own the poutine is around 550 calories so you could be looking at 800 for the burger option.
Ingredients
- 6 tbsp unsalted butter
- 2 tbsp cornstarch
- 2 tbsp Water
- 20 oz beef stock
- 10 oz chicken stock
- 1 dash pepper
- 2 garlic cloves
- quarter cup Flour
- 2 lbs Potatoes
- Frying Oil or Fat
1 Β½ cups cheese curd or torn mozzarella
