Really easy Fish Cake recipe with Haddock and Prawns

Method

    1. Place smoked haddock in a pan & cover with milk. Bring to the boil, then simmer for 4-5mins. Drain & leave to cool.
    2. Bring a pan of lightly salted waterto the boil & add potatoes, peeled & chopped. Simmer for 6-7 mins until cooked, then drain & place the potatoes in a mixing bowl. Mash & set aside.
    3. Remove all skin & bones, then flake the smoked haddock into the mashed potato. Add prawns, parsley, lemon zest & seasoning.
    4. Divide the fishcake mixture into 8 equal patties. Heat 2tbsp olive oil in a frying pan & fry each cake for 2 mins each side until golden brown.
    5. Bake the cakes at gas 6/200c/400f for 10-12mins.
    6. Serve with a green salad & tartare sauce
