- 375g/13oz pork loin steaks,diced
- 15ml/1tbsp vegetable oil
- 15ml/1tbsp plain flour,seasoned with black pepper
- 1 Onion peeled and sliced
- 350ml/12floz chicken stock
- 15ml/1tbsp Wholegrain Mustard
- 200g/7oz Carrots peeled and sliced
- 300g/10 ยฝoz Potatoes. peeled and chopped into chunks
- 1 cox apple. cored and sliced
- 15ml/1tbsp fresh parsley. chopped

bit of a winter warmer but a nice change for a sunday dinner quick & easy to make in one pot

1. toss pork in the seasoned flour to coat.
2. heat oil in a flameproof pan, then cook the onion & pork over a high heat for 10mins to seal.
3. add the stock & mustard & bring to the boil, stirring. put the carrots & potatoes in the pan. return to the boil the reduce the heat. cover & simmer for 15mins.
4. add the apples & cook for a further 10mins until the apples & vegatables are soft & the meat is tender. sprinkle with the chopped parsley & serve with green vegatables of your choice.
