1. heat 2tbsp olive oil in a pan with 25g unsalted butter. add 3 large onions, sliced & gently cook for 10mins. add 1/2tsp sugar & cook them for a further 10mins until the onions are very soft. then add 1.2ltr beef stock & simmer gently while you make the toasts.
2. preheat a grill to a hot setting. cut 8x1.5cm slices of french bread. toast one side of the bread under the grill, then flip & sprinkle the toasts with 75g gruyere or cheddar cheese, grated. return to the grill & cook until golden.
3. pour the soup into 2 large bowls & place the cheese toasts on top. sprinkle with chives, chopped & serve immediately.
