Description
This is really versatile. Originally for hazelnut meringue cake, it is great with cheesecake, syllabub, lemon posset, almond cakes, and rich chocolate cakes.

Whizz together the raspberries and icing sugar with a hand-held stick blender, or in a food processor.
Pour into a jug or serving dish.
Optional - if you don't like the bits, you strain through a sieve, pushing it through with the back of a spoon.
