- small dash oregano
- 100g parmesan cheese. grated
- 100g Fontina or Parmesan
- 100g Mascarpone Cheese
- small dash Nutmeg - ground
- small ball buffalo mozzarella torn into pieces

oven to 200oC.
Cook the macaroni, drain and reserve a little of the water.
In a Frying pan heat the butter, add the oregano and fry until crisp. Turn off the heat
Add the pasta, parmesan cheese, Fontina, Mascarpone Cheese and a few spoons of water.
return to medium heat.
toss the mixture until the cheese melts and it is a goo.
Put in an oven dish, add the grated nutmeg buffalo mozzarella and extra parmesan. Put in the oven for 10 mins and then the grill to brown if necessary.
