dedicating this recipe to myself and all mini cupcake fanatics! Be creative and enjoy baking this lovely fail proof recipe!!

Method

    Preheat your oven to 180oC and place your paper cups into your cupcake pre moulded tin

    In a large bowl, sieve the self raising flour and ginger together and mix well and leave aside for the moment!

    In your electric mixer, start on a slow blend and spin (butter and sugar tend to escape voluntarily until creamed together!) and add your castor sugar, orange essence and soft butter and cream until soft and pale.

    Now you can add your milk and eggs and keep mixing

    The next step is to take a tablespoon of your spiced flour and "fold" it in and do this until you have used all the flour up!

    Take one tablespoon of the cake mixture and spoon it into each of the paper cups (any more than 1 tablespoon and it will overflow, trust me... I know!)

    Place the cupcakes on the middle shelf of the oven and bake for 15-17 minutes until golden

    Remove from the oven and allow to cool before applying the frosting!

    Making the vanilla fondant frosting: In a large bowl, sieve the icing sugar as this will create a very smooth icing for you.

    In a measuring jug or cup, IN THIS ORDER: add the tablespoons of boiling water, Natural Vanilla Essence, Natural Orange Essence, red & yellow food colourant, glycerine and liquid glucose and stir really well together. You're looking for a nice orange-rose pink colour, similar to what I have but of course, the food colourants (*) are optional

    Now, drop a little into the icing sugar and using a table fork begin mixing it around

    You're aiming for the consistency similar to toothpaste! So be gentle as you add the liquid to the icing sugar.

    Take a tablespoon of the frosting and spoon it over the cooled cupcakes and leave to set!

    Now you can add extra decoration as you wish, be creative and enjoy baking!!
