bit of a mish mash of things i have done seperatly then experimented by putting them together. you don't get much easier and is full of flavour!

    andalusian pork,
    first the pork needs marinating overnight, so mix together all the ingredients well then mix with the pork nice and thoroughly, Then leave in fridge over night. when cooking i just grill for 5 - 7 mins each side so you can do this while you are cooking the rest of the meal.

    spinach and sweet potatoe mash,
    boil the sweet potatoe for 10-15mins, or until soft, then when nearly cooked quickly wilt the spinach in the butter, drain the potatoes, mash slighlty then add the spinach and butter and mash together adding salt and pepper to taste.

    balsamic onions,
    simply peel the onions and cut into rings. gently fry in olive oil until soft then turn up the heat and add a decent splash of balsamic vinegar and cook until reduced.
    Then simply dish it all up! The balsamic onions cut through the flavour of the mash and pork really nicely. A lovely contrast!

Chef's Tips

if your timing isnt to great you can always do the mash a bit early as this takes the longest and keep it warm in the oven until ready to serve.
