- 200g Baby Leaf Spinach
- 500g Diced Potatoes
- 20g Fresh Sage (shredded)
- 1 Large (Chopped) Red Onion
- 2 Crushed Garlic Cloves
- 60g Butter
- 2 Vegetable Stock Cubes
- 1ยฝ Ltr Hot Water

I love the Sage aroma of this dark green delicious soup.

In a large saucepan.
Melt Butter and gently cook the Onion, Garlic and Potatoes.
Make a stock with the Cubes and Water and add to the pan.
Bring just to the boil and add the Baby Spinach and Sage.
Simmer for 5 Minutes
Transfer the Soup to a blender.(I do this in 2 batches)
Return Soup to the Pan and Simmer for a few minutes.
