Ingredients
- 400g lean beef mince
- 3 medium potatoes, peeled, dried and thinly sliced
- 2 garlic cloves peeled and finely chopped
- 2 tsp. ground paprika
- 2 large courgettes, topped, tailed and very thinly sliced lengthways
- 2 red or green chilli peppers, de-seeded and finely chopped
- 50g Cheddar cheese, grated
- 4 eggs, beaten
- salt and freshly milled pepper
- 2 tbsp. sunflower oil
- fresh rocket or watercress to garnish

Pre-heat the oven to 200C, Gas 6.
Heat the oil in a large non-stick frying pan. Cook the potato slices for 10 minutes, turning regularly until golden brown. Remove from the heat and drain on kitchen paper.
In the same pan, cook the mince with the garlic, seasoning and paprika for 5-7 minutes. Set aside to cool.
Lay half of the potato sliced over the base of a square ovenproof dish (20cm x 20cm) or similar, followed by a layer of courgette. Sprinkle the chopped chilli peppers over the top and pour over the mince mixture. Add another layer of courgette, the remaining potato slices and sprinkle over with the Cheddar cheese.
Season the beaten eggs and pour over the dish. Leave for 1-2 minutes for the eggs to settle.
Bake for 20-25 minutes then set aside to cool slightly. Cut into slices and serve warm. Garnish with the rocket or watercress.
Chef's Tips
Serve with garlic bread, or a green salad, or Tikka potatoes, with chilli or mango sauce on the side.
