- 200g Frying Beef
- 4 inch cucumber
- 3 roots Fresh Corriander
- 3 cloves garlic
- 2 tsp fresh ginger
- 1 table spoon Guilin chili sauce (or see recipe)
- 3 birds chilli (not de-seeded)
- 1 table spoon chilli oil
- 1 table spoon nut oil
- 1 tsp Szechuan pepper corns
- ... thick egg noddles,

Description
Szechuan food is a heavy cuisine which is very hard to find outside of China. This a classic combination of the main flavors: Chilli, Ma (Szechuan pepper), beef and fresh herbs/veg
Method

1. crush szechuan pepper and quickly dry fry to release the flavor. Then put to one side
2.finely chop chilli, garlic and ginger. Crush
3.chop beef across grain into stir fry pieces
4.finely chop fresh corriander, spring onions and julien cucumber.
5. add nut oil to wok and heat to high and very hot.
6.add garlic, ginger and chilli, fry off for three seconds to flavour the wok.
7.add beef
8.add Guilin Chilli sauce, (if this is not availible add some kind of fermented soya bean paste, a few more chillies, a bit of sugar and a pince of salt)
9.fry beef until cooked to your taste (30 secs rare, 1-2mins medium, 3... mins well done).
10.turn of heat
11.add in spring onions, corriander, cucumber and szechuan pepper and toss.
12. serve and eat
13. the quantity is meant to serve 6 people as part of a six dish set, if no others are cooked two people can enjoy this with salade or whatever.
14. i served this with thick egg nooddles
15. dribble chilli oil over noodles
