- 500g apples-dessert,chopped
- 75g SR flour (sieved)
- 1 tspn baking powder
- 125g caster sugar
- 6 tb spns milk-full fat
- 4 tb spns oil-sunflower
- 2 Eggs Beaten-size3
- 75g butter-unsalted
- 100g caster sugar
- 1 tspn Vanilla essence(not flavoring)
- 1 egg. beaten- size3

A personal favourite with batter rather than cake mix. A moist cake ideal for breakfast

Prepare an 8 inch loose bottom tin, line with greaseproof paper. Oven temp 170 C.
1. Place chopped apple in tin, apple can be skinned or un-skinned
2. Mix cake ingredients together to form a smooth batter
3. Pour over apples
4. Bake in middle of oven-45-50 mins until risen and
golden brown
5. Beat topping ingredients together and pour over warm cake
6. Return to oven for further 30 mins
7. Cool on wire rack and carefully slide grease proof out
under-best roll it back on its self away from cake base
8. Dust with icing sugar best served warm with cream of your choice i.e. chantilly,creme fraiche, double cream or my favourite fresh clotted cream

Once you have made and served this recipe you will be making it regularly. It has a delightful crunchy sugary top to bite through into a moist cake loaded with sweet apples. If using a 12inch tin treble recipe, can adjust buy adding pears or peaches and spice with cinnamon
