2 eggs. beaten
5 oz butter or margarine

2 kiwi fruit, peeled and quartered
3 oz desiccated coconut

Description

I adapted this from another recipe, it is moist and delicious.The all in one method makes it simple to prepare.

Method

Combine all ingredients in a large mixing bowl, beat with an electric mixer for 2 minutes or longer by hand.

Spoon into a large loaf tin which has been lined with greaseproof paper.

Bake in a preheated oven at 160C or 140 for a fan oven, bake for 1hr then check, bake for a further 10 mins if not set.

Allow to cool in the tin for 15 mins then turn out onto a wired rack.
